Ingredients

  • 1.5 cups cooked couscous (fluffed)

  • 1/2 cucumber, diced

  • 2 tomatoes, diced

  • 1/4 red onion or shallot, finely minced

  • 1/2 cup olives, pitted and halved

  • 1/2 cup crumbled feta cheese

  • 2 cups lettuce (chopped)

  • 1/2 cup fresh parsley, finely chopped
    1/4 cup fresh mint, finely chopped

  • 3 tbsp extra virgin olive oil

  • Juice of 1/2 to 1 lemon (to taste)

  • Salt and black pepper to taste

Directions

  • In a large mixing bowl, combine the finely minced red onion and the lemon juice. Let this sit for 5 minutes
  • Whisk olive oil into the onion and lemon mixture with a pinch of salt and pepper.
  • Add the diced cucumber, tomatoes, and olives to the bowl. Toss well.
  • Fold in the cooked, fluffed couscous, the chopped parsley, the mint, and the crumbled feta cheese. Stir.
  • You can either chop the lettuce and mix it directly into the salad for extra crunch, or serve the salad on a bed of whole lettuce leaves for a beautiful presentation
