Ingredients

  • 2 salmon fillets (about 6 oz / 170 g each)

  • 1 cup couscous

  • 1 cup low-sodium vegetable or chicken broth

  • 1 tablespoon olive oil

  • 1 teaspoon smoked paprika

  • ½ teaspoon dried oregano

  • 1 cup mini carrots, steamed or roasted

  • 1 cup cucumber, sliced

  • ½ cup roasted yellow bell pepper, sliced

  • ¼ cup fresh cilantro, chopped

  • 1 tablespoon fresh lemon juice

Directions

  • Grill the Yellow Pepper in a Pan
    Wash the yellow bell pepper, remove the seeds, and slice it into thin strips.
    Heat a grill pan or heavy skillet over medium-high heat. Add a drizzle of olive oil.
    Place the pepper slices in the pan and cook for 4–6 minutes per side, until they become tender and develop beautiful golden-brown grill marks.
    Season with a pinch of salt and freshly ground black pepper. For extra Mediterranean flavor, add a small drizzle of extra virgin olive oil and a squeeze of fresh lemon juice before serving.
    Set aside for assembling your salmon couscous bowl.
  • Prepare the Couscous
    Bring the vegetable or chicken broth to a boil. Remove from heat and stir in the couscous and olive oil. Cover and let it sit for 5 minutes until the liquid is absorbed.
    Fluff the couscous with a fork and season with salt, pepper, and a squeeze of fresh lemon juice. Add chopped cilantro and mix.
  • 3. Cook the Salmon in the Air Fryer
    Preheat the air fryer to 400°F (200°C) for 3 minutes.
    Pat the salmon fillets dry with a paper towel. Rub them with olive oil, then season with smoked paprika, garlic powder, onion powder, oregano, salt, and black pepper.
    Place the salmon fillets skin-side down in the air fryer basket. Cook for 7–10 minutes, depending on the thickness, until the salmon flakes easily with a fork and reaches your preferred doneness.
  • 4. Assemble the Mediterranean Bowl
    Divide the couscous between two bowls. Arrange the steamed or roasted mini carrots, sliced cucumber, and roasted yellow pepper around the couscous.
    Place the air fryer salmon fillet on top. Finish with fresh cilantro and a drizzle of extra virgin olive oil.
