Mediterranean Lemon Chicken Bowl with Brown Rice, Tomato & Cilantro

Ingredients
2 chicken breasts (about 450 g / 1 lb)
1 cup cooked brown rice
1 large tomato, diced
½ onion, diced
¼ cup fresh cilantro, chopped
Juice of 1 lemon
1 tablespoon olive oil
2 cups lettuce, chopped
Salt and black pepper to taste
Directions
- Cook the chicken: Heat the olive oil in a large pan over medium heat. Add the onion and tomatoes and sauté for 2–3 minutes. Add the chicken, season with salt, pepper, and your favorite herbs, and cook until lightly browned.
- Add the flavor: Pour in a splash of white wine and the lemon juice. Let it simmer until the chicken is fully cooked and the sauce has slightly reduced.
- Cook the rice: Prepare the brown rice according to the package instructions.
Prepare the lettuce: Wash and dry the lettuce. Toss with a simple vinaigrette of olive oil, vinegar, salt, and pepper.
Serve: Plate the brown rice with the Mediterranean chicken and vegetables, and serve alongside the dressed lettuce. Garnish with fresh cilantro and an extra squeeze of lemon if desired.
