This Mediterranean Grilled Salmon Bowl is one of my favorite healthy meals. It’s fresh, colorful, and full of simple Mediterranean flavors. The grilled salmon is tender and pairs perfectly with grilled fennel, sweet bell peppers, juicy tomatoes, creamy avocado, and fluffy rice. The secret to making this bowl taste its best is using fresh salmon and fresh vegetables. A little olive oil, lemon, and a few seasonings are all you need to let the ingredients shine. It’s an easy recipe that’s perfect for a quick weeknight dinner or meal prep for the week.

Ingredients

  • For the Salmon: 4 fresh salmon fillets (5–6 oz each)
    2 tablespoons extra virgin olive oil
    2 garlic cloves, minced
    1 teaspoon smoked paprika
    1 teaspoon dried oregano
    ½ teaspoon salt
    ½ teaspoon black pepper
    Juice of ½ lemon

  • For The Bowl: 2 cups cooked rice (white rice, brown rice, or Mediterranean-style saffron rice)
    1 fennel bulb, sliced into thick pieces
    2 bell peppers (red, yellow, or orange), sliced
    1 cup cherry tomatoes, halved
    2 ripe avocados, sliced
    Fresh parsley or basil for garnish
    Lemon wedges for serving

  • Lemon Olive Oil Dressing:
    3 tablespoons extra virgin olive oil
    Juice of 1 lemon
    1 teaspoon Dijon mustard (optional)
    1 small garlic clove, minced
    Salt and pepper to taste

Directions

  • Prepare the Salmon
    Pat the salmon dry with a paper towel.
    Mix olive oil, garlic, smoked paprika, oregano, salt, pepper, and lemon juice.
    Brush the salmon with the seasoning mixture.
    Grill over medium-high heat for about 4–5 minutes per side, until the salmon is cooked through and flakes easily.
  • Grill Veggies: Brush the fennel slices and bell peppers with olive oil.
    Season with salt and pepper.
    Grill for 3–5 minutes per side until tender and lightly charred.
    Remove from the grill and slice into smaller pieces if desired.
  • Make Dressing: Whisk together olive oil, lemon juice, Dijon mustard, garlic, salt, and pepper.
    Adjust seasoning to taste.
  • Assemble the Bowls: Add cooked rice as the base.
    Top with grilled salmon, grilled fennel, peppers, tomatoes, and avocado.
    Drizzle with lemon olive oil dressing.
    Finish with fresh herbs and a squeeze of lemon.

Notes

  • For the best Mediterranean flavor, serve the salmon warm with the vegetables slightly charred and the avocado added fresh at the end.
