Mediterranean-style tuna and farfalle pasta salad with creamy avocado dressing, served with a boiled egg and toasted olive bread.

Ingredients

  • 2 Avocados

  • Farfalle Pasta (cooked)

  • Peas

  • Boiled Spinach

  • Fresh Tomato (cut into cubes)

  • Cucumber (chopped)


  • 1 Tin of Tuna in Olive Oil

  • Red Onion (diced)

  • Avocado Mayonnaise (for added creaminess)

  • Lemon (for dressing)

  • 1 Boiled Egg per person

  • Kalamata Olive Bread (toasted, served on the side)

  • Salt and pepper

Directions

  • Take your cooked farfalle pasta from the night before and place it in a large mixing bowl.
  • Combine ingredients: Add the tuna (in olive oil), diced fresh tomato, chopped cucumber, peas, cooked spinach, avocado and diced red onion to the pasta.
  • Dressing: In a small bowl, whisk together: avocado mayonnaise, fresh lemon juice, salt, and pepper until smooth.
  • Toss and serve: Pour the dressing over the pasta mixture and toss thoroughly until well-coated.
  • Plate the dish: Serve the salad with a halved boiled egg and a side of toasted kalamata olive bread.
