Ingredients
10 large fresh, high-quality shrimp (5 per person)
1 cup parboiled brown rice
3 garlic cloves, minced
2 tbsp extra virgin olive oil
½ chili pepper, finely chopped
¼ cup white wine
Fresh lettuce
Balsamic vinegar
Salt and black pepper, to taste
Directions
- Cook the rice
Cook 1 cup of parboiled brown rice with 2 cups of water.
Bring to a boil, reduce the heat, cover, and cook until tender and the water is absorbed, about 15–20 minutes or according to the package instructions. - Cook the shrimp
Heat the olive oil in a skillet over medium heat.
Add the garlic and gently sauté without burning it.
Add the fresh shrimp and chili pepper. Cook for a few minutes on each side until golden and cooked through.
Add the white wine and cook for a few more minutes.
Season with salt and black pepper.
Finish with a small drizzle of extra virgin olive oil. - Prepare the salad
Wash and dry the lettuce well.
Place it in a serving bowl or plate.
Add extra virgin olive oil, salt, pepper, and a splash of balsamic vinegar.
Toss gently and serve with the shrimp and brown rice.
