Why I Created The Mediterranean Bowl Project
The Mediterranean diet is more than a way of eating, it is a lifestyle built around fresh ingredients, simple preparation, and the joy of sharing good food.
Inspired by the traditions of Spain, Greece, Italy, and the coastal regions of the Mediterranean, this style of cooking celebrates vegetables, legumes, whole grains, seafood, fresh herbs, and healthy fats like extra virgin olive oil.
Growing up surrounded by Mediterranean cooking traditions, I learned that the best meals do not need to be complicated. A few quality ingredients, seasonal produce, and a little creativity can transform a simple recipe into something that makes you feel great.
I created The Mediterranean Bowl Project to explore how everyday ingredients can become balanced, colorful, and delicious meals that fit into a healthy lifestyle.

Mediterranean Chicken Bowl

Ingredients
2 boneless, skinless chicken breasts
2 tablespoons extra virgin olive oil
Juice of 1 large lemon
2 garlic cloves, minced
1 teaspoon dried oregano
1 teaspoon smoked paprika
½ teaspoon ground cumin
½ teaspoon kosher salt
¼ teaspoon freshly ground black pepper
2 cups cooked quinoa or couscous
1 (15-ounce) can chickpeas, rinsed and drained
1 English cucumber, diced
1½ cups cherry tomatoes, halved
½ small red onion, thinly sliced
½ cup crumbled feta cheese
½ cup Kalamata olives, pitted and halved
¼ cup chopped fresh parsley
Optional: baby spinach or mixed greens for the base
Lemon Herb Dressing: ¼ cup extra virgin olive oil
Juice of 1 lemon
1 tablespoon red wine vinegar
1 teaspoon Dijon mustard
1 teaspoon honey
1 teaspoon dried oregano
1 small garlic clove, grated
Salt and freshly ground black pepper, to taste
Directions
- Marinate the Chicken
In a shallow bowl or resealable bag, whisk together the olive oil, lemon juice, garlic, oregano, smoked paprika, cumin, salt, and pepper. Add the chicken breasts. - Cook the Quinoa While the chicken marinates, cook the quinoa according to the package directions. Once cooked, fluff it gently with a fork and let it cool slightly.
Tip: Cooking quinoa in low-sodium chicken or vegetable broth instead of water adds more flavor. - Grill the Chicken
Heat a grill pan or outdoor grill over medium-high heat. Cook the chicken for 6–7 minutes per side, depending on thickness, until the internal temperature reaches 165°F (74°C).
Transfer the chicken to a cutting board and let it rest for 5 minutes before slicing into strips. - Prepare the Vegetables
While the chicken rests:
Dice the cucumber.
Slice the cherry tomatoes in half.
Thinly slice the red onion.
Chop the parsley.
Drain and rinse the chickpeas.
Halve the Kalamata olives.
Using the freshest produce you can find especially at your local farmers market. - In a small jar or bowl, combine the olive oil, lemon juice, red wine vinegar, Dijon mustard, honey, oregano, garlic, salt, and pepper. Whisk or shake until smooth and emulsified.
Taste and adjust with additional lemon juice or salt if desired. - Divide the quinoa evenly among four serving bowls. If using greens, add a layer beneath the quinoa. Arrange the chicken, chickpeas, cucumber, tomatoes, red onion, olives, and feta in sections over the quinoa. Sprinkle with fresh parsley.
Drizzle generously with the lemon herb dressing just before serving.
Notes
- Marinate the chicken overnight for the most flavorful results.
Bring the chicken to room temperature for about 15 minutes before cooking for more even grilling.
Allow the cooked chicken to rest before slicing to keep it juicy.
Store the dressing separately if preparing the bowls ahead of time.
Add sliced avocado or toasted pine nuts just before serving for extra richness and crunch.
