Bison Burger with Swiss Cheese, Caramelized Onions & Arugula

Start with one package of ground bison and gently mix it with garlic, herbs, salt, and black pepper. Form the mixture into individual patties and cook them in a hot skillet until browned and cooked to your liking.
While the burgers cook, slowly sauté thinly sliced onions in olive oil until soft and golden. Toast thick slices of sourdough until crisp, then build your burger starting with a generous layer of fresh arugula. Add the bison patty, melted Swiss cheese, and caramelized onions on top.
The result is a juicy homemade bison burger with caramelized onions and Swiss cheese, served on crispy sourdough, a delicious alternative when you want something a little different from the classic burger.
Have You Ever Tried a Bison Burger?
If you’ve never tried a bison burger, you might be surprised by how different it tastes from a traditional beef burger. Bison is naturally lean, with a rich, slightly sweet flavor that makes a great base for a simple homemade burger.
For this recipe, I keep things flavorful but uncomplicated: seasoned ground bison, golden caramelized onions, melted Swiss cheese, peppery arugula, and crispy toasted sourdough. The combination gives you plenty of texture and flavor without needing a heavy sauce.

kcalThis Bison Burger with Swiss Cheese, Caramelized Onions & Arugula is a flavorful, rustic open-faced burger made with seasoned ground bison, toasted sourdough bread, melted Swiss cheese, sweet caramelized onions, and fresh peppery arugula. The bison is seasoned simply with garlic, herbs, salt, and black pepper, then cooked until beautifully browned and topped with creamy Swiss cheese. It’s an easy, satisfying homemade bison burger with a Mediterranean-inspired touch and plenty of flavor.
Ingredients
1 package ground bison (about 1 lb)
1 slice high-quality sourdough bread
1 medium onion, thinly sliced
1 slice Swiss cheese per person
1 handful fresh arugula
1 tbsp olive oil
1 small garlic clove, minced
½ tsp dried or fresh herbs (thyme, oregano, or Italian herbs)
Salt, to taste
Black pepper, to taste
Directions
- Make the bison burgers:
Place the ground bison in a bowl. Add minced garlic, herbs, salt, and black pepper. Gently mix until combined. Form the mixture into individual burger patties.
Toast the sourdough:
Slice the sourdough bread and toast it in a skillet or toaster until golden and crisp. - Cook the onions:
Heat olive oil in a large skillet over medium heat. Add the sliced onions and cook for 10–15 minutes, stirring occasionally, until soft, golden, and caramelized. Season with salt, pepper, and a little herbs.
Cook the bison burgers:
Heat a skillet over medium-high heat and add a little olive oil. Cook the bison patties until browned and cooked to your preferred doneness, turning once. Avoid pressing down on the burgers while cooking. - Add the Swiss cheese:
Place Swiss cheese on each burger during the last minute of cooking. Cover the skillet briefly so the cheese melts.
Assemble:
Place a generous layer of fresh arugula directly on the toasted sourdough. Add the bison burger with melted Swiss cheese and top generously with the caramelized onions.
Serve:
Serve immediately while the sourdough is crisp, the bison is juicy, the Swiss cheese is melted, and the onions are warm and golden.
Notes
- You can also use a combination of half bison and half Black Angus beef if you prefer a richer, more traditional beef flavor while still enjoying the leaner taste of bison.
