Ingredients
For the rice
1 cup rice
1 small onion
2 cups water
Salt
1 tbsp extra-virgin olive oilFor the chicken and salad
1 chicken breast
2 cups fresh spinach
¼ cup toasted almonds, roughly chopped
Flour, for coating
1 egg
Breadcrumbs
Salt and black pepper
Olive oil, for cookingFor the Dijon vinaigrette
1 tbsp Dijon mustard
2 tbsp extra-virgin olive oil
1 tbsp white wine vinegar or apple cider vinegar
1 tsp honey
Salt and black pepper to taste
Directions
- Cook the onion rice
Finely chop the onion. Heat the olive oil in a saucepan and sauté the onion over medium heat until soft and lightly golden.
Add the rice and stir for about 1 minute, allowing it to absorb the flavor of the onion. Add the water and a pinch of salt. Cook until the rice is tender and the water has been absorbed. Remove from the heat and let it rest for a few minutes. - Prepare the crispy chicken
Cut the chicken breast into small bite-sized pieces. Season with salt and black pepper.
Set up three bowls: one with flour, one with the beaten egg, and one with breadcrumbs. Coat each piece of chicken in flour, then egg, and finally breadcrumbs.
Heat a little olive oil in a pan and cook the chicken until golden and crispy on the outside and fully cooked inside. You can also prepare the chicken in an air fryer. - Make the Dijon vinaigrette
In a small bowl, combine the Dijon mustard, vinegar, honey, olive oil, salt, and black pepper. Whisk until smooth and well combined. - Toast the almonds
If the almonds are not already toasted, place them in a dry skillet over medium-low heat. Toast for a few minutes, stirring frequently, until lightly golden. Let them cool slightly and roughly chop them. - Assemble the bowl
Divide the onion rice between two bowls. Add the fresh spinach and arrange the crispy chicken pieces on top.
Sprinkle with the toasted almonds and drizzle generously with the Dijon vinaigrette just before serving.
