It’s an easy, satisfying homemade bison burger with a Mediterranean-inspired touch and plenty of flavor.

Ingredients

  • 1 package ground bison (about 1 lb)
    1 slice high-quality sourdough bread
    1 medium onion, thinly sliced
    1 slice Swiss cheese per person
    1 handful fresh arugula
    1 tbsp olive oil
    1 small garlic clove, minced
    ½ tsp dried or fresh herbs (thyme, oregano, or Italian herbs)
    Salt, to taste
    Black pepper, to taste

Directions

  • Make the bison burgers:
    Place the ground bison in a bowl. Add minced garlic, herbs, salt, and black pepper. Gently mix until combined. Form the mixture into individual burger patties.
    Toast the sourdough:
    Slice the sourdough bread and toast it in a skillet or toaster until golden and crisp.
  • Cook the onions:
    Heat olive oil in a large skillet over medium heat. Add the sliced onions and cook for 10–15 minutes, stirring occasionally, until soft, golden, and caramelized. Season with salt, pepper, and a little herbs.
    Cook the bison burgers:
    Heat a skillet over medium-high heat and add a little olive oil. Cook the bison patties until browned and cooked to your preferred doneness, turning once. Avoid pressing down on the burgers while cooking.
  • Add the Swiss cheese:
    Place Swiss cheese on each burger during the last minute of cooking. Cover the skillet briefly so the cheese melts.
    Assemble:
    Place a generous layer of fresh arugula directly on the toasted sourdough. Add the bison burger with melted Swiss cheese and top generously with the caramelized onions.
    Serve:
    Serve immediately while the sourdough is crisp, the bison is juicy, the Swiss cheese is melted, and the onions are warm and golden.

Notes

  • You can also use a combination of half bison and half Black Angus beef if you prefer a richer, more traditional beef flavor while still enjoying the leaner taste of bison.
