Ingredients
8 oz (225 g) ground beef
8 oz (225 g) thinly sliced beef steak (bistec), cut into small strips
4 small corn tortillas
1 cucumber, diced or sliced
1 ripe avocado, sliced
2 tbsp olive oil
1 tbsp red wine vinegar
2 tbsp roasted pepitas (pumpkin seeds)
¼ cup fresh cilantro, chopped
½ small onion, finely diced
Salt and black pepper, to taste

Directions
- Heat a large skillet over medium-high heat. Add the diced onion and cook for 2–3 minutes until softened. Add the ground beef and sliced steak to the pan. Season with salt and black pepper, then cook for 8–10 minutes, breaking up the ground beef and stirring occasionally until both meats are fully cooked and lightly browned.
- While the meat cooks, place the corn tortillas in the air fryer and heat at 375°F (190°C) for 2–3 minutes, or until warm and slightly crispy around the edges.
- In a bowl, combine the cucumber with the olive oil, red wine vinegar, a pinch of salt, and the roasted pepitas and cilantro seeds. Toss well.
- ill each warm tortilla with the beef mixture.
Top the tacos with sliced avocado and fresh cilantro.
