This fresh and healthy shrimp salad combines arugula, avocado, cucumber, red onion, and crisp apple with a creamy avocado mayonnaise dressing, olive oil, lemon juice, and apple cider vinegar. A quick, nutritious, and flavorful recipe perfect for lunch, dinner, or as a light appetizer.

Ingredients

  • 9 oz (250 g) cooked shrimp
    2 cups fresh arugula
    1 ripe avocado, diced
    1 medium cucumber, diced
    ½ red onion, finely diced
    1 medium apple, diced
    Juice of 1 lemon
    3 tablespoons avocado mayonnaise
    2 tablespoons extra virgin olive oil
    1 tablespoon apple cider vinegar
    Salt, to taste
    Black pepper, to taste

Directions

  • If using raw shrimp, cook them in boiling salted water for 2–3 minutes until pink and opaque. Drain and let cool completely.
  • Wash and dry the arugula thoroughly.
  • Dice the avocado, cucumber, apple, and finely chop the red onion.
  • In a large mixing bowl, combine the shrimp, arugula, avocado, cucumber, red onion, and apple.
  • In a small bowl, whisk together the lemon juice, avocado mayonnaise, olive oil, and apple cider vinegar until smooth and creamy.
  • Pour the dressing over the salad and gently toss until all ingredients are evenly coated.
    Season with salt and freshly ground black pepper to taste.
    Refrigerate for 15 minutes before serving for an extra-refreshing salad.

Notes

  • Serve with toasted whole-grain bread or good quality crackers for a complete meal.
