Wash and slice the vegetables. Arrange the greens, cucumber, tomatoes, cabbage, avocado, and carrots into separate sections. - Make the dressing:
Whisk together tahini, lemon juice, olive oil, garlic, water, salt, and pepper until smooth and creamy. - Assemble the Buddha bowl:
Place the cooked grains in the center of a bowl. Arrange the roasted vegetables, chickpeas, and fresh ingredients around it in colorful sections.
