Ingredients

  • 1.5 lbs chicken breasts (thin-cut)

  • 2 tbsp olive oil

  • 1/2 cup sun-dried tomatoes (chopped)

  • 3 cloves garlic (minced)

  • 1 tsp dried oregano & 1/2 tsp red pepper flakes

  • 1 cup heavy cream

  • 1/2 cup chicken broth

  • 1/2 cup grated Parmesan cheese

  • Fresh basil for garnish

  • 1 cup of couscous and 1 cup of water

Directions

  • Bring the chicken broth (or water) and butter to a rolling boil in a small saucepan.
  • Remove from heat immediately. Stir in the dry couscous.
  • Cover the pot tightly with a lid and let it sit undisturbed for 5 minutes.
  • Remove the lid, fluff the couscous gently with a fork, then stir in the lemon juice and fresh herbs. Season with salt and pepper to taste.
  • Sear the Chicken: Season the chicken breasts with salt and pepper. Heat 2 tbsp of olive oil in a large skillet over medium-high heat. Cook for 5–7 minutes per side until golden brown and cooked through. Remove and set aside.
  • Sauté Aromatics: In the same skillet, add the sun-dried tomatoes and minced garlic. Sauté for about 1 minute until fragrant.
  • Build the Sauce: Stir in the dried oregano and red pepper flakes. Pour in the chicken broth and heavy cream. Bring the mixture to a gentle simmer.
  • Simmer and Thicken: Reduce the heat to low and stir in the Parmesan cheese. Let the sauce simmer for 3–5 minutes until it thickens slightly.
  • Return the chicken to the pan and spoon the sauce over the top. Let it cook for another 2 minutes to heat everything through.
