Tilapia: 2 fresh tilapia fillets
Vegetables: 1 small head of cauliflower (cut into florets), 1 zucchini (sliced into rounds), and ½ red onion (cut into wedges)
Seasoning: 1 tbsp French fine herbs (Herbes de Provence)
Essentials: 2 tbsp extra virgin olive oil, 1 large lemon (thinly sliced), and sea salt to taste.
Wild Rice: 1 cup cooked wild rice
Directions
- In a large mixing bowl, toss the cauliflower florets, zucchini rounds, and red onion wedges with one tablespoon of olive oil and half of the French fine herbs.
- Air Fry the Vegetables: Arrange the vegetable mixture in the air fryer basket. Cook at 375°F (190°C) for 8-10 minutes, shaking halfway through, until they are golden brown and tender.
- Season the Tilapia: While the vegetables cook, drizzle the tilapia fillets with the remaining olive oil and coat them thoroughly with the rest of the French fine herbs and a pinch of salt. Place lemon slices directly on top of each fillet to infuse them with citrus during cooking.
