This Mediterranean Couscous with Beef is an easy 30-minute dinner packed with flavor. Tender ground beef is cooked with red wine, garlic, and Mediterranean herbs, then served over fluffy couscous and topped with sweet balsamic cherry tomatoes. Ingredients

  • 1 cup couscous
    1¼ cups chicken or vegetable broth
    1 lb (450 g) lean ground beef
    ½ cup red wine
    2 garlic cloves, minced
    1 small onion, diced
    2 cups cherry tomatoes, halved
    2 tablespoons balsamic vinegar
    3 tablespoons extra virgin olive oil, divided
    1 teaspoon dried oregano
    1 teaspoon dried thyme
    Salt and black pepper, to taste
    Fresh basil or parsley, chopped

Directions

  • Heat 1 tablespoon olive oil in a large skillet over medium heat. Sauté the onion until soft, about 3–4 minutes. Add the garlic and cook for another minute.
    Add the ground beef and cook until browned, breaking it apart with a spoon. Season with oregano, thyme, salt, and pepper.
    Pour in the red wine and simmer for 5–7 minutes until most of the liquid has reduced.
    In a separate skillet, heat the remaining olive oil. Add the cherry tomatoes and cook for 3–4 minutes. Drizzle with the balsamic vinegar and cook another 2 minutes until the tomatoes begin to soften.
  • Meanwhile, bring the broth to a boil. Remove from the heat, stir in the couscous, cover, and let stand for 5 minutes. Fluff with a fork.
    Divide the couscous among serving bowls. Top with the beef mixture and spoon the balsamic cherry tomatoes over the top.
    Finish with fresh basil or parsley, an extra drizzle of olive oil, and crumbled feta if desired.
